SALES /OPERATION MANAGER .POSITION SUMMARY: Supervises concessions operations and employees, and ensures compliance with State laws and policies and standard operating procedures.MAJOR RESPONSIBILITIES: Supervises the concessions employees in the preparation and service of food and refreshments, as well as clean-up.Assists in the training of concessions employees engaged in the preparing and cooking foods to ensure high quality, efficient and profitable food service.Supervises storage, preparation, and serving of refreshments by other workers at refreshment stand or circulating throughout audience.Assigns concessions workers to locations.Tabulates receipts and balances accounts.Assist the Operations Manager with refreshment stand or other food concessions at the local facility.Participates in planning all requirements for C.O.D. sales locations including merchandise sales.Operate all C.O.D. sales locations.Enforce quality standards of service and products; Food service sanitation and safety; cash handling procedures; alcoholic beverage laws; security of F&B funds and inventories; and company rules and regulations.Create and distribute daily event information sheet for all sport and major events.Coordinate the requisitions for refreshments, according to anticipated demand and familiarity with public taste in food and beverage.Inventories all supplies on hand at the end of each day or other designated period.Completed stand sheets within 72 hours of close of show in computer application system.Monitor and inventory locations through applications system.Responsible for creating and auditing daily timesheets and submitting to Operations Managers.SUPERVISORY RESPONSIBILITIES: Supervises the storage, preparation, and serving of refreshments by workers at the concessions stand or circulating throughout the audience.Schedule Food Service Supervisors and set-up supervisors.Directly supervises all employees in concessions. Carries supervisory responsibilities in accordance with policies and applicable laws. Oversees the supervision of up to 8 employees per shiftAssists in supervising cleaning, custodial, and maintenance duties as assigned of concessions area. Daily contact with: all guests, staff, and Operations management MINIMUM REQUIREMENTS:Minimum 2 years experience in supervisory level position in Concessions operationsPrior supervisory experience requiredAbility to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals. Must be have a flexible scheduleTo perform this job successfully, an individual should have the ability to learn new computer applications programs as needed.Strong hospitality orientation.
